Are we able to opt out of trekking one day on the TMB and take public transport instead, if necessary?

Technically, it is possible to do almost all sections of the tour the Mont blanc by public transport, albeit some of those journeys can be quite long!

The only days where it is not possible is between Courmayeur and Les Chapieux, and Les Chapieux to Les Contamines.

So – yes – it is possible to have easier days if you’re wiped out.
