On the TMB are the included meals from a set menu? What is the general quality of food?

There is a fixed 3 or 4 course meal each night at the hotel you are staying at and the food is generally good. Vegetarians are well catered for and vegan and gluten-free diets can be catered to on most nights. The only exception is at La Pauld (Courmayeur) where we stay for two nights and head out to local restaurants.
